Tasting Notes
Our “Old School” Cabernet Sauvignon features a complimentary blend of 85% Cabernet Sauvignon and 15% Merlot. A nose of black currant and black cherry are layered with hints of cedar. The palate is bright but complex with hints of plum and blackberry with soft tannins and well-integrated French oak from 12 months of aging. The finish is long and silky with a soft overall balance not found in most Cabernet Sauvignons. Pair with braised short ribs, grilled portobello mushrooms or an aged cheddar. Best now through 2037.
“The Dancing Schoolhouse” Label is an original watercolor by Jude Bishoff and is a tribute to the collective energy of former students of our historic schoolhouse.
