Harvest got started last Friday morning, bright and early! Pinot Noir grapes are picked and have been processed to become Blanc de Noir, Rose and Pinot Noir “Principal’s Choice”. Our Chardonnay was also picked over the weekend. Fermentation is in process. Our Cabernet Sauvignon, Cab Franc and Merlot are still on the vine. We will assess brix (sugar) and pH levels this week.
