Harvest Update!

Our Cabernet Sauvignon, Cab Franc and Merlot are still on the vine. We have assessed brix (sugar) and pH levels and determined that the grapes need more hang time. We’re hoping for some sunshine over the next couple of weeks!
Pinot Noir punch down continues. Punch down is essential during fermentation to keep the skins in contact with the juice, extracting color and flavor.
